Honey Wheat Bread recipe

I make this Honey Wheat bread as our normal bread loaf for everyday use.  I generally put it into the bread maker on the dough cycle, then pull it out, split it into 2 loaves and proof it again before baking.  I could bake it in the bread maker, but I don’t like the shape of the loaf that comes out, it’s not terribly practical for use.

* 1 1/3 cup warm water
* 1 large egg
* 1/4 cup honey + a little more for extra sweetness
* 2 tablespoons olive oil
* 1/2 teaspoon salt
* 1/2 teaspoon vanilla extract
* 2 cups Whole Wheat flour (King Arthur)
* 2 cups Bread flour (King Arthur)
* 2 1/2 teaspoons bread machine instant yeast (blue lid)

Add the first 6 ingredients to the bread machine pan, in that order.  Then add the Whole wheat flour, then the regular bread flour, then the yeast.  Put the machine on the dough cycle (that’s an hour and a half of mixing and rising).

When the dough cycle finishes, take the dough out and split it in half.  Stretch and shape the dough to fit 2 pre-sprayed loaf pans.  Let it rise again until it reaches close to the desired size of the loaf.  Bake in a 350 degree oven for 35 minutes. 2-16-2010 edit: Bake 30 minutes at 350 degrees.  Remove and cool on a wire rack.  Voila, bread!

If you’d like to mix in ingredients, like say jalapeno and cheddar, then after you split the dough, roll/stretch it flat and lightly sprinkle your ingredients on the whole loaf (kind of like a pizza).  Roll the dough up into a cylinder and place in the loaf pan.  Allow bread to rise and then bake as usual.
